Chef Mendizabal’s dishes reflect the confluence of Asian and Latin cuisines in a menu that interprets how Asian immigrants to Latin America adapted their cuisine to the New World ingredients and Latin culture. Meat, seafood and produce are carefully selected to the highest standards highlighting their own true flavors and origin. In particular, Fujimar’s ceviche and sushi bar will feature unusual delicacies like Tasmanian King Salmon and Hapu’up’u. Bar chefs Ari and Micah Wilder designed Fujimar’s beverage program utilizing locally sourced and seasonal ingredients in drinks created using classic techniques. The wine list features imports produced by artisan winemakers, ranging from the mineral-laden Austrian Gruner Veltliner and German Rieslings to Cru Beaujolais and Priorat.

Empanadas are crescent-shaped turnovers, stuffed with well-seasoned combinations of meats, vegetables, spices, fruits, and sweets. Our recipes are inspired by the idea of Latin Fusion cuisine; a culinary concept based on creating new recipes by combining traditional and modern culinary techniques and mixing ingredients from different countries in the Americas. We make our own dough, fresh daily, with 100% natural ingredients. We also use no lard so our dough is the only vegan dough around! We have a variety of savory empanadas to choose from such as our carne, chicken pesto, or the jamon y queso. We also have seafood and veggie empanadas and a variety if dipping sauces like salsa verde, aji, chimi, and pimenton. Your complete satisfaction is our top priority here at Panas Gourmet. Authentic, rustic, Italian fare featuring a variety of small plates, house-made charcuteries, breads, cheeses and antipasti. Wood-fired pizzas are also available along with a selection of paninis and salads at lunch, and house-made pastas, whole roasted fish and a premiere selection of meats during dinner. Customers can purchase 70% of the restaurant’s menu “to go” including 50 cheeses (five of which are made in-house while the rest are made from local farmers or imported from Italy) sold by the ounce, two house-made prosciuttos and several other house cured meats. Fresh and dried house-made pastas are available for purchase by the kilo, along with house-made sauces and rustic house-made breads. The daily specials are posted on the chalkboard. Wine List: A boutique wine list with 100 wines available by the bottle; 70% of the wines incorporate Italian grapes. Prices range from $22 to $350 by the bottle, with a majority of the selections available for under $100. Additionally, a number of wines are available by the glass for $6. The restaurant has a selection of innovative cocktails, incorporating house-made vermouth and liquors made by aging fruit in oak barrels.
