For many years, tourists flocked to the local fishermen’s houses to feast on local pacific lobsters. These lobsters, split open and flash-fried, were presented on big platters and served with piping hot flour tortillas, delicious ranchero beans, Mexican rice and local red hot chili sauce. Guests would pick the meat from the shells and wrap it in the tortillas along with the beans, rice and a dousing of hot sauce! And of course, icy cold Mexican beers and pitchers of margaritas would be the beverage of choice! In 1983, Rick DiRienzo, the founder of Rockin’ Baja Lobster, introduced these lobster dinners to legions of fans in San Diego. He converted the historical Old Bonita Store in Bonita California, to a Puerto Nuevo style lobster house. In 1992, he opened a second location on the harbor in Oceanside, CA. It was here that he created his now famous Baja Buckets®. Not satisfied with just lobster prepared Baja style, he experimented doing every type of shellfish the same way. Our buckets now come with choices ranging from slipper lobster tail, shrimp, and snow crab, all prepared Baja style. The Original Baja Bucket® comes overflowing to your table with Baja style slipper lobster tails and shrimp along with grilled carne asada and chicken. A house favorite! What truly adds to the sunny coastal paradise of our restaurants, besides our beach murals and funky artwork and signage, are some very important ingredients: our unlimited all-you-can-eat chip and salsa bar, warm flour tortillas, platters of Mexican rice and beans, and the endless smiles and hospitality of our staff. We pride ourselves on offering our guests a fun, rockin’ good time, truly delicious and unique food offerings, icy cold beer by the bucket, if you wish, and a varied selection of the best-tasting margaritas anywhere. The authentic Mexican cuisine served by Tio Carlos since 1986 are the roots and foundation for Tio Chino's menu. The "Classic Carlos" menu offers traditional favorites like Carnitas, Chile Verde and Carne Asada, all hand cut prepared from scratch. Spanish colonization of the Mariana Islands (includes Guam, Tinian, Rota and Saipan) brought many of these similar traditions to the islands, and modern Chamorro cuisine is a melting pot with roots traceable to indigenous Chamorro, Spanish, Japanese, German and surrounding Micronesian cultures. California Cuisine has always been ahead of the curve with its integration and interpretation of global food cultures, as it reflects the melting pot of people that is Southern California. The modern mix of Japanese and other Asian flavor profiles creates Tio Chino; a blend of the old and the new, familiar and unique, and the past and the present.
