Chef Mendizabal’s dishes reflect the confluence of Asian and Latin cuisines in a menu that interprets how Asian immigrants to Latin America adapted their cuisine to the New World ingredients and Latin culture. Meat, seafood and produce are carefully selected to the highest standards highlighting their own true flavors and origin. In particular, Fujimar’s ceviche and sushi bar will feature unusual delicacies like Tasmanian King Salmon and Hapu’up’u. Bar chefs Ari and Micah Wilder designed Fujimar’s beverage program utilizing locally sourced and seasonal ingredients in drinks created using classic techniques. The wine list features imports produced by artisan winemakers, ranging from the mineral-laden Austrian Gruner Veltliner and German Rieslings to Cru Beaujolais and Priorat.

Truly a pan-Asian fusion of cuisine, culture and history! An Introduction to Eriteran Cuisine Shahan ful is usually simplified to ful and is a common Eritrean dish that is generally served for breakfast. It is made by slowly cooking fava beans in water then crushing them into a coarse paste. It is often served with chopped green onions, tomatoes, hot green peppers, as well as yogurt, feta cheese, olive oil, lemon juice, berbere (special Eritrean spices), and cumin. It is typically eaten with your hands and a bread roll. It can also be eaten with injera (flatbread made from teff, wheat, or sorghum). Injera is a yeast-risen flatbread with a unique, slightly spongy texture. Often made out of teff flour it is a national dish in Eritrea. Berbere is a spice mixture whose ingredients usually include chili peppers, garlic, ginger, dried basil, korarima, rue, white and black pepper, and fenugreek. More to come soon! Keep checking back!

Award-winning chef Michael Schlow, who owns and operates the popular TICO restaurant on DC’s 14th Street corridor, is set to open his second area restaurant this summer: The Riggsby, in the Carlyle Hotel at 1731 New Hampshire Avenue, NW in the Dupont Circle neighborhood. Named for the street that intersects the restaurant, Riggs Place, the restaurant’s name also pays homage to the former Riggs Bank. The intimate yet refined space was designed by Brian Miller of Edit Lab at Streetsense, and will feature an open kitchen, wood tables, leather booths, brass finishes and whimsical décor, that includes a custom designed wallpaper incorporating original artwork from Schlow’s wife, mixed media artist, The eclectic bar and lounge area will seat 40 guests, while the dining room seats 75 and also has a cozy private dining space for ten. The Riggsby will have a fun yet sophisticated ambience, serving American dishes with European influences. The inviting bar will have an emphasis on classic, hand crafted cocktails, bar snacks, and an extensive wine by the glass program. Schlow, considered one of the leading culinary professionals in the United States, has tapped Chef Philippe Reininger, an acolyte of Jean-Georges Vongerichten who was most recently executive chef at J&G Steakhouse in Washington DC, to oversee the kitchen; and Daniel Lobsenz, who most recently oversaw front of house operations and managed the wine programs for both Roofer’s Union and BLT Steak, will be The Riggsby General Manager. The restaurant will serve breakfast, lunch, dinner and Sunday brunch. Final food and beverage menus, along with operating hours, reservations, and other information will be made available closer to opening.
