Brett Knipmeyer: Owner/Executive Chef After graduating from the Western Culinary Institute in Portland, Oregon, Chef Brett Knipmeyer returned to Chicago for a stint at the world renowned Charlie Trotter’s. After moving to Alaska to be the head chef at Jen's Restaurant Brett has now staked his own culinary claim, and named it after his daughter, Kinley.

Not knowing fast food, the back of the house is built to be less burger joint, more five-star restaurant. When they needed a sauce, the Chefs didn’t call a food supplier. They started chopping. Villa Nova Restaurant has not moved from its present location for the thirty years since the late Chef Giorgio Chrimat first opened the doors for the business. Since then it has gathered a book full of stories about many customers and employees that created for the restaurant a family-like Legacy. Coinciding with this personal touch there has continued a legacy of high-end food preperations cooked individually in a distinctly European manner by Executive Chef Dale Keefe and Sous Chef John Norquist. Many of this preparations have remained on the menu since Giorgio's first day of the business. Perhaps Villa Nova may not appeal to everyone, but it has maintained a devoted following of customers that no matter how far away go, they continue to return when possible for a Fine Dining Experience mixed with bit of welcome reminiscing.

Since we opened our first restaurant in Boardman, OH, in 1964, we’ve been serving quality meats on handcrafted sandwiches. We call this transformation from a cut of meat to a delicious sandwich “Meatcraft™”, and our dedication to Meatcraft™ informs every decision we make. From the sandwiches we serve to our curly fries, shakes and sides, everything we do is in service to the meats. It’s why we get to work every morning at 8 a.m. even though we don't open until 11. Good food takes time to prepare, and we’re happy to put in the time to make your meal great.
