José Andrés’ was fascinated by the history he found connecting China and Mexico, two countries whose cuisine he has always admired. He wanted to bring these vibrant flavors and culinary techniques together in one place- where you can enjoy noodles, dumplings and tacos in one meal. Signature menu items include a large selection of tacos, featuring duck tongue, carnitas and Yucatan-style barbecued pork. Here you'll also find har gau, steamed dumplings, dan dan noodles, specialty soups like Swallow a Cloud and Ten Treasure, and an unexpected delight, rou jia mo, a chopped braised pork sandwich.

Although it's the largest city founded in the 20th Century, Las Vegas retains the energy of a frontier town where the unexpected is still a daily occurrence. The dining scene is equally as adventurous and Charlie Palmer is one of its trail blazers. Sensing that Vegas was about to undergo a renaissance, Palmer made an early investment, opening Aureole in the Mandalay Bay Resort in 1999. The show stopping menu under the direction of Executive Chef Vincent Pouessel combines the classic cuisine of Aureole with the theatricality of Las Vegas in dishes like Olive Oil Poached Oregon Petrale Sole with Truffled Brussels Sprouts and Ahi Tuna and Veal Shank "surf and turf", while a four-story, temperature controlled glass and steel wine tower—the largest in the world—houses 10,000 of Palmer's award-winning 50,000 bottle list, made accessible by an elaborate pulley system presided over by "flying wine angels" clad in black spandex Calvin Klein. After all, this is Vegas.
Located in the heart of Mandalay Bay, Citizens Kitchen & Bar will feature Chef Brian Massie’s creative and contemporary take on American comfort food, opening January 2013.
Charlie Palmer Steak Las Vegas offers a quiet, clubhouse atmosphere in a warm ochre palette and dark mahogany accented refuge, just off the lobby of The Four Seasons Hotel. The dining room’s grand arches, reminiscent of an elegant Spanish home, bestow a sense of intimacy and privacy, while deep couches and over stuffed club chairs bring a homey feel to the lively lounge. What do you do in a town where too much is not enough? If you're Charlie Palmer, you create a steakhouse where big just isn't big enough. Voted "best steakhouse in Las Vegas" by the Las Vegas Review Journal just four months after opening, Charlie Palmer Steak provides a clubhouse atmosphere of quiet luxury—favored by sophisticated diners who want to step away from the bustle of the hustle. Chef de Cuisine Steve Blandino's menu satisfies with dishes like Colorado Rack of Lamb with Ratatouille Tart,as well as excellent cross selection of traditional cuts including a Charcoal Grilled Filet Mignon in Roasted Shallot Jus and a 28 day aged Bone in Rib Eye. The wine list, specializing in Napa Valley Cabernet and exciting new Pinot Noir producers from up and down the West Coast, also offers a wide range of old world wines from the Rhone Valley, Bordeaux, Burgundy, Spain, Germany and Italy, as well as vintages from off-the-beaten path, under the "Wines for the Adventuresome" sections.
