Our original creation of our “Wraps” and “Rolls” came our Lebanese heritage, where sandwiches can have many different names. “Luff-ee” which is a common name, means “wrap” when translated to English. We decided to redesign our menu to create all our dishes served inside of a tortilla as a “Wrap”, while calling our dishes served inside a pita a “Roll-Up”. Since the birth of the wrap and roll-up, we have been able to offer many options ranging from Chicken Tawook to the Falafel Monster. In Thai cuisine, a number of core ingredients and sauces can be used in a wide variety of dishes, ranging from vegetarian to those featuring meat, fowl, or fish. The supporting elements for an entrée of filet of cod can be worked into a pasta or duck dish, with radically different results. Our careful application of the trinity of sauces--fish sauce, oyster sauce, and soy sauce--with a touch of palm sugar, and requisite heat, provides a base level of complexity and depth of flavor across a spectrum of dishes, allowing for greater control and speed in the kitchen. Our flavor profile also makes for rich, satisfying food without being heavy, or using a lot of fat. Head Chef Sivika "Pon" Hunter is classically trained in French cuisine and sauces but remains grounded in her native Thai cuisine. The merging of these two distinct styles makes our menu a uniquely delicious treat.
The Villge Smokhouse opened it's doors on August 4th, 1987, with the help of friends from Galveston, Texas, who brought along their grandmother's original back home recipes. Many years later, we still use those original recipes from"Nana Kelly" and I'd like to take this opportunity to thank all of you for making this establishment a staple for Bar-B-Que in the greater Boston Area. We have so many beautiful memories over the years with both the customers and the staff, having catered so many special events such as weddings, rehearsal dinners, holiday parties and bithdays. I'm sure a lot of you have noticed, that most of the staff have been here for many many years and that's because The Village Smokehouse is a family. We have all grown with each other, been to others weddings and are now watching each others kids grow up. It's been an absolute pleasure to have shared so many years of work with people that I call "my Dear Friends" with many more years to come.
