In July of 1997, Vesta opened in the emerging Lodo district of downtown Denver with a unique name and intriguing concept. The name, derived from Vesta (the Roman Goddess of the hearth), was meant to conjure feelings of warmth and family gathering. Hearth fires, as described in Roman mythology, represented the center of the home, providing an oven to prepare meals as well as warmth to gather friends and family. This imagery sparked many of the design elements in the bar and dining room and inspired the concept of the kitchen's exposed grill. (See more about Vesta's design here.) The original Vesta concept focused on grilled meats inspired by preparations from around the world. These dishes were paired with your choice of sauces, served on the side, also inspired from cuisines across the globe. Chutneys, salsas, marmalades, aiolis, and more, competed for attention from a list of over 30. Over time, the exotic dipping sauces and skewers phased out and Vesta's cuisine evolved into a refined menu of seasonally-driven, stand alone dishes prepared with a focus on technique. In late 2016, Vesta brought in Denver-raised Executive Chef, Nicholas Kayser, to update the menu. With his prior experience as an Executive Chef at top restaurants in NY, Las Vegas, and Hong Kong, the menu saw a full update in November of 2016. In the front of house, Sommelier and General Manager, Eric Dutton has built a bar program to match the Vesta’s menu. To reflect Denver’s great culture of micro-brewing and distilling, Vesta offers an ever-growing selection of world class beers and the best, locally-produced spirits. The wine list receives perennial recognition of excellence from Wine Spectator magazine, and the Sommelier Journal featured Vesta’s barrel-aged cocktail program as a leader in the field. Perhaps the most telling awards on Vesta’s mantle are their multiple ‘Best 1st Date in Denver’ awards -- an indication that Vesta combines a beautiful, sexy interior; warm but unobtrusive service; and a dining experience worthy of putting your best foot forward. But the achievement that trumps all others for Vesta is that the restaurant has become a go-to destination for guests celebrating special occasions or hosting friends and family from out of town. In that sense, Vesta truly embodies the essence of the hearth -- a place where delicious meals are prepared, and friends and family gather by the warmth of the fire.

Led by Chef Darren Pusateri and his team, our chefs often play with a single ingredient, and express it several ways in one dish, so every beautiful nuance can be savored. Often we’ll pair distinctly different flavors that, when combined, create something altogether new. No matter the preparation, each dish is crafted with respect, appreciation, and a big shout-out to the land and its bounty. Holla, beets! You’ll find The Squeaky Bean in Denver’s LoDo district. But the roots of our dirt-driven eatery grow far and wide. From Bean Acres, our year-round farm and greenhouse operation, we’ve cultivated a community of young farmers, culinary artists, students and food lovers with a deeper connection to the soil and the way food is brought to the plate.
You know how so many of the bars and restaurants that surround Coors Field exist solely for game day? We all know the drill: Shabby tents set up outside, live-feed radio dorks in the window (a paid indulgence your high drink prices are subsidizing), a general sense of chaos. They serve you mediocre beer that is jacked up in price for game day. That’s right, I said it: They charge you more on game day than every other day. Ruminate on that unpleasant tidbit. Well, the Icehouse Tavern isn’t like that. This is a cool pub with a nice, normal pub vibe that just happens to be located a block from Coors Field. Victor is a smart veteran of the business, a great dude who likely poured you a few at The Elm before taking over in Lodo. On a normal evening the Icehouse staff gives you that proper balance of positivity and attention to feel connected when you stroll in for drinks, dinner, or both. On game days, they ramp-up staff with fast & smart servers – not to be confused with the rent-a-lamprey servers you get around the way. PS- how do $2 Coors Lights sound on Game Day? That’s what I’m talking ‘bout, Willis. The Obvious: Icehouse Tavern has a big, beautiful oval bar – the better for ordering from wherever you happen to be; More high-def flat screens than you could ever possibly want; Exposed ancient brickwork all around; The absolute perfect atmosphere for pre-game food and grog; doors and a patio that are open wide all summer long. And food that is reasonable and tasty. The Not-So-Obvious: A smart, vintage feel throughout; 2 well-placed pool tables; Deep, cozy booths; Great sound system and digital juke; A clientele devoid of the inherent sports bar douchiness that we can all live without; And the hotter-than-average women who prefer places without the aforementioned sports bar douchiness. Order it up to go – they will wrap it for you and include the fixings. Daily beer specials are what the Icehouse is all about. Surprisingly, I found that people here appreciate sushi very much, and this finding made me very happy, because this is something my team can provide. My best friend, Chef Mike (Masatoshi Nakanishi) and I gathered our professional team to establish Aoba Sushi, a unique and stylish sushi restaurant, in the heart of Denver. The Rio Grande Mexican Restaurant is proud to announce the opening of “Black Crow” - a unique outdoor venue next to The Rio. Black Crow is a concept within a concept. It is a separate, distinct urban offering that resides next to the Rio. It has its own food truck serving a fun & unique menu, including tortas (Mexican style sandwiches), street tacos and sliders to name a few. Customers can access Black Crow from Blake Street through its main front gate entrance located at 1525 ½ Blake Street or they can access it through the Rio. Black Crow incorporates the recent trend of "food trucks" with a casual, outdoor setting where music will be played and movies will be watched. Look for the Black Crow food truck with its walk-up window, set behind the Rio’s outdoor patio, where Mexican street food, Rio margaritas, and ice cold Mexican beers will be served.
