About Our Chef Chef David Conn spent the last eight years honing and exploring his craft in Manhattan and Brooklyn. While his Southern roots (Nashville, Savannah) play a role in his cuisine, they do not define nor constrict his world view of cuisine. Conn saw NYC as a gateway to the cuisines of many cultures; while Executive Chef in New York, he made time to work with other chefs from North Africa, New Zealand, Guatemala, as well the bulk of Europe including Spain. Conn held positions at Delta Grill, Cornelius, and Keg and Lantern in NYC and as owner/chef Edisto in Nashville. As a consultant, he helped more than 10 NYC restaurants get back on track by rewriting recipes, menus, and setting front of house practices. With degrees in Music and Philosophy, Chef Conn began his career as a Professor and conductor of music on the faculty of Cornell University- after ten years there, he left his post to pursue cooking full time, training in Savannah, Georgia and Chicago. At 5127, Conn will riff on familiar culinary ideas, reinventing dishes across cultural lines and pushing out the boundaries of modern cuisine.
