Wynkoop Brewing Company is part of craft beer history. Founded in 1988 by a group of passionate craft beer lovers led by current Colorado Governor John Hickenlooper. Our brewpub’s hallmarks -- highly acclaimed small-batch beers, high quality food & service, the city’s best pool hall and our glorious 1888 building -- helped make us a major catalyst for the revival of Lower Downtown Denver. Today Wynkoop Brewing Company is a beer-blessed Denver institution, a must-visit Colorado landmark and one of the nation’s most revered craft breweries. Look for our full line of cans in local stores and kegs of all of our beers at the area’s top bars and restaurants. Our History Our pioneering brewpub (Colorado’s first) is housed in the glorious J. S. Brown Mercantile Building, built in 1899. The Mercantile Company was a cornerstone of the young Denver economy and one of the city’s most impressive early buildings. Its hardwood floors, thick timber pillars and pressed-tin ceilings are still in place today. Miners, ranchers and city folks walked this building looking for goods to furnish their Western adventures and frontier homes. In 1899 our main floor served as the Mercantile’s original showroom. Today it’s home to our main bar, restaurant, brewery and kitchen. On the south side of our main floor is our Mercantile Room, now a renovated banquet room replete with high ceilings and expansive arched windows. The giant metal door you see by the main bar? It was once the door to the building’s main vault. Today it holds a different sort of valuables: our brewers and their office. The second floor is the home of Wynkoop Billiards, arguably the city's most elegant pool hall. We have 22 pool tables, two private pool rooms, dart lanes and a bar serving most of the same acclaimed beers you find downstairs. This floor also houses some of our most popular banquet rooms, and the entire floor and pool hall are available for private functions. The backbar on this floor was rescued from the original tasting room of the old Tivoli Brewery, a famed Denver brewery located at what is now the Auraria college campus. In our basement you’ll find the serving tanks for all of our beers, and we now hand can our beers down there, too. The Impulse Theater is also on our basement level and welcomes grinning crowds to its hugely popular improv-comedy shows. Cheers!

In July of 1997, Vesta opened in the emerging Lodo district of downtown Denver with a unique name and intriguing concept. The name, derived from Vesta (the Roman Goddess of the hearth), was meant to conjure feelings of warmth and family gathering. Hearth fires, as described in Roman mythology, represented the center of the home, providing an oven to prepare meals as well as warmth to gather friends and family. This imagery sparked many of the design elements in the bar and dining room and inspired the concept of the kitchen's exposed grill. (See more about Vesta's design here.) The original Vesta concept focused on grilled meats inspired by preparations from around the world. These dishes were paired with your choice of sauces, served on the side, also inspired from cuisines across the globe. Chutneys, salsas, marmalades, aiolis, and more, competed for attention from a list of over 30. Over time, the exotic dipping sauces and skewers phased out and Vesta's cuisine evolved into a refined menu of seasonally-driven, stand alone dishes prepared with a focus on technique. In late 2016, Vesta brought in Denver-raised Executive Chef, Nicholas Kayser, to update the menu. With his prior experience as an Executive Chef at top restaurants in NY, Las Vegas, and Hong Kong, the menu saw a full update in November of 2016. In the front of house, Sommelier and General Manager, Eric Dutton has built a bar program to match the Vesta’s menu. To reflect Denver’s great culture of micro-brewing and distilling, Vesta offers an ever-growing selection of world class beers and the best, locally-produced spirits. The wine list receives perennial recognition of excellence from Wine Spectator magazine, and the Sommelier Journal featured Vesta’s barrel-aged cocktail program as a leader in the field. Perhaps the most telling awards on Vesta’s mantle are their multiple ‘Best 1st Date in Denver’ awards -- an indication that Vesta combines a beautiful, sexy interior; warm but unobtrusive service; and a dining experience worthy of putting your best foot forward. But the achievement that trumps all others for Vesta is that the restaurant has become a go-to destination for guests celebrating special occasions or hosting friends and family from out of town. In that sense, Vesta truly embodies the essence of the hearth -- a place where delicious meals are prepared, and friends and family gather by the warmth of the fire.
Pigtrain Coffee (named for the trains that carry truck trailers on flatbed rail cars) brews locally-roasted coffees from Denver's family-owned Novo Coffee. The coffee spot will also offer pastries and fresh squeezed juices from local sources as well as adult coffee beverages, so one can enjoy a real Irish coffee, or add some Kahlua to their java, while enjoying the bustle of the Great Hall of the newly renovated Union Station. The space features coffee bar seating and a large patio overlooking Wynkoop Plaza.
