One of my bucket list items was to have a restaurant and it has been one of the most challenging jobs that I have had. Hours are grueling. Having fantastic customers and a sandwich which turns out golden brown makes it worth it. My intentions was to have a place that didn't have all the same old same old. I think I have accomplished that. I have a different Special of the Week every week. The sandwich is the same all week but the soup changes during the week. Many days I make an abundance of soup and use it the next day but to me soup is better the second day anyway. I cook at the restaurant just like I do at home. I like to change things up. I might use a french bread for sloppy joes one time or next time put them in a pita. Must be the Gemini in me.
