Using a mixture of both Irish and local craftsman, Rí Rá managed to respectfully retain the building's detailed, marble facade, blending the old with the new. The pub captures a number of distinctive styles, each designed to celebrate a different aspect of the traditional pub experience. Bethesda OutsideThe "Victorian Shop & Pub" contains some salvage that is over 120 years old and displays bric-a-brac that represents Irish music, sports and literature. A relaxed haven for diners can be found in "The Cottage" area, which features a working stone fireplace. The "Snugs" provide an intimate setting for the art of conversation, for which the Irish are renowned. Originally opened in March 1999, the pub was extended in 2002 to add "The Library" area which is dedicated to Ireland's rich literary heritage. The Library can be booked as a private party room and can accommodate groups of up to 22 seated for plated dinners, or 35 for a cocktail style party. Any visit to Rí Rá is a pleasure, where you can relax in the warm, welcoming atmosphere, revel in the art of conversation, and enjoy the award winning food.

A long-standing landmark on Main Street in Burlington, Nectar’s restaurant and bar has been the headquarters for thousands of local, regional and national music acts. From Phish to Grace Potter, from reggae to rock, Nectar’s Bar and Lounge is THE place to see live music in downtown Burlington. The building itself has a long history of entertaining. Originally a savings and loan, the building was purchased to create a two-story restaurant/lounge called the Hi-Hat. The chandelier that hangs over the main room today is a relic of the grand Hi-Hat. In 1975, Nector Rorris bought the building to create the infamous Nectar’s. The stage became legendary when a group of then-unknown local musicians known as Phish began to play regularly, sowing the seeds of their enormous following. Since then, the room has become Burlington’s preeminent live music lounge, and the home of what have got to be the world’s best gravy fries. In 2003 Nector sold the business to the present owners and in April of 2012 the present owners purchased the entire building making sure the future of this landmark live music institution has a long successful future! Mission Statement: We are so committed to our mission statement that we printed it on the back of our staff shirts for all the world to see! FRESH MUSIC SERVED DAILY!

Pacific Overtures Side Dishes: San Sai Japanese restaurant coming to Burlington By Alice Levitt [04.26.11] Since Taste closed at 112 Lake Street in Burlington in 2009, the prime restaurant real estate has remained vacant. Until now. On May 12, a Japanese restaurant called San Sai will open its doors. According to co-owner Chris Russo, in modern Japanese san sai refers to produce grown in the mountains. In an older version of the language, he says, it means “foraged edible.” Both meanings seem appropriate for the restaurant’s business model. “Up until recent times in Japan, sushi was a treat, not everyday food,” Russo explains. Instead, the focus will be on handmade dishes crafted from local products. “It’s big for this area, but that’s how most people eat in Japan,” says Russo of the localvore trend. “Their cuisine is based on local, seasonal ingredients.” Russo has partnered with Tamarack Hollow Farm, where Amanda Andrews is growing a laundry list of Japanese fruits and vegetables specifically for San Sai. Burdock and bitter melon are in the ground, as are shiso and Japanese varieties of turnips, gourds and cucumbers. Tamarack Hollow will also supply chickens, which Russo will use for yakitori. “We will be using about every part,” he says of the traditional skewered fowl. “Chicken heart, cartilage, tendons … and not just chicken; there’ll be pork, beef and vegetables, too.” At San Sai, Russo says, vegetarian fare will be far from an afterthought. Tofu will be made in-house and used in cold dishes this summer and hot pots in the cold months, when Japanese curries are also likely to grace the menu.

Coffee is ultimately a living thing. It is a plant which reacts to, and is changed by, its environment. This means that each farm, in each growing region around the world will produce a coffee that is unique. In wine, this idea is referred to as "terroir", or "place". We rarely taste this in coffee because it is so often blended and roasted in a way that makes it all taste like, well, coffee. At Onyx Tonics our intention is to tease out the unique flavors of high quality coffees from around the world. We think you'll be surprised with the results. As coffee is a living thing, it has seasons. Our offerings will reflect this, and our coffee menu will change weekly. Our intention is to continue exploring coffee throughout the year. When we hit our stride, a customer should be able to have a different drink every time they come in.
