The menu, created by Executive Chef Norman Hargrove, formerly of The Peninsula Hotel Chicago, consists of an assortment of traditional Southern and New Orleans dishes. Ramen-San’s menu is created by Chef/Partner Doug Psaltis and Executive Chef Marcelo Han. Ramen-San showcases elevated ingredients across six ramen dishes offered on the menu. These include a traditional tonkotsu pork broth, kimchi and fried chicken ramen - a nod to Chef Han’s Korean heritage, and a vegetarian broth. Guests can further customize their ramen to fit their tastes with updated takes on traditional Japanese add-ons like kimchi, smoked brisket, fried chicken, molten egg and more. In addition to its ramen offerings, the menu also includes Asian-inspired snacks, a selection of Montou buns and chicken wings. Mixologist Paul McGee developed the beverage program, which features Japanese whiskey, Asian-inspired cocktails and local and Japanese craft beer with Asahi on draft served through a special draft tower imported from Japan. Ramen-San is a lively, neighborhood restaurant and bar in River North reminiscent of traditional ramen shops in Japan. The space is raw, anchored by exposed brick and reclaimed wood, which makes for an understated, yet inviting ambiance. Ramen-San marks the partners’ fourth collaboration with Japanese designer Kota Bando, who created a comfortable, approachable space where diners can enjoy noodles in a casual setting for dinner and late night.

Firecakes offers small-batch donuts, made from scratch, using traditional recipes with creative twists. Chef Jonathan Fox will guide Firecakes' innovative culinary direction. His dedication to sourcing environmentally responsible ingredients (local, natural and the freshest available) will be evident in every donut on the menu. Firecakes' vision is to take the simple concept of a donut to a new level by incorporating interesting flavor and texture combinations.

He created Asian and global inspired desserts at Aria, the hotel’s award-winning restaurant. The Aria Sushi Bar, Lobby Lounge and the Club Lounge were other outlets at the Fairmont which offered international desserts. Prior to Fairmont Hotel, Chef Rios served as executive pastry chef at Sofitel Hotel Chicago for almost four years. He enjoyed the challenge of preparing modern French pastries for the flagship location of this French hotel company. As executive pastry chef for the Art Institute of Chicago for six years, Chef Rios created many themed buffets and displayed his talents in matching modern and traditional pastry to art exhibits and shows for this famous museum. There, his creations met the mouths of global visitors and dignitaries. Chef Rios has trained extensively in Europe and has participated in demonstrations in Paris, Lyon and Nice, France and most recently in Chocolate and Pastry seminars in Istanbul, Turkey. Chef Rios is a graduate of Kendall College.
