Our famous beer began with a trip across Europe, when Goose Island founder (and unabashed beer lover) John Hall took a tour across the continent. Pint by pint, he savored the styles and selections of brews in every region, and thought to himself, “America deserves some damn fine beer like this, too.” Craft brewing wasn’t widely known at the time, but upon return from his European sojourn, John set out to change all that. He settled down in his hometown of Chicago—a city perfect for craft beer, with rapidly evolving tastes and the largest system of fresh water on the planet. And then he got to brewing. First he made some stellar beer. Then he invited his consumers in to watch his process at the brewery, bringing them behind the scenes every step of the way. The result was a new fascination with craft brewing, and beer that not only catered to people’s tastes, but challenged them as well. That was back in 1988, and we haven’t slowed down since. By 1995, John’s beer had become so popular that he decided to open a larger brewery, along with a bottling plant to keep up with demand. 1999 brought even more growth, along with an additional brewpub, and today, what was once one man’s pint-filled dream has become the Goose Island empire you know and love.
We are proud to announce the grand opening of All Rise Brewing Company, coming to Chicago in March of 2015! Master-brewer, Tommy Nicely, has spent the last 20 years developing his craft in anticipation of this project, with stops along the way including; Goose Island Fulton Street, Harpoon, Lagunitas and Half-Acre. All Rise owner, Sean McKeough (co-founder of Riot Fest and owner of Cobra Lounge), is finally achieving his goal, along side Nicely, to launch a world-class brewery in Chicago, while setting a precedent for innovation in green concepts. Sean and his team have managed to create a L.E.E.D.S. Certified build out and plan to maintain a sustainable business while striving to achieve any and all green certifications available. With a successful template in place, Sean also plans to roll these green concepts over to his other endeavors including Juno and Japonais by Morimoto. Look out for our debut at this years Riot Fest in Chicago. We plan on launching our flagship "Wonder Beer" (American pale ale), as well as another Tommy Nicely original, to a capacity crowd in Humbolt Park! A New American Tradition: The History of Bays English Muffins Across the ocean in 1933, George W. Bay opened a bakery in Chicago's downtown Loop district starting a new chapter in baking history. He sold English muffins with orange marmalade - a Bay family tradition. Using the original recipe his English grandmother brought to this country in the 1800s, George Bay made English muffins with only top-quality ingredients. Sold by the dozen in brown paper bags, the muffins were hand-delivered to bakeries, restaurants, hotels and private clubs. Soon Americans made English muffins a favorite breakfast meal. In 1938, Bays Corporation was one of the first companies to package their English muffins in a box with a cellophane window. The muffins were sold by the half dozen and distributed to major grocery stores including Jewel and National Tea Stores. As the English muffin gained acceptance in the U.S., it lost popularity in its homeland. By the 1950s, it was rumored that the Queen Mother, unable to find muffins commercially, had established a source for her own private supply. In the early 1970s, McDonald's introduced the highly successful Egg McMuffin - a delicious Canadian-style bacon, egg and cheese breakfast sandwich on a toasted Bays English Muffin. Today, Bays continues to carry on the family tradition - operating as a family business and adhering to the authentic, original recipe. Bays maintains its standard of excellence using only Hawaiian cane sugar, Minnesota spring wheat and whole milk, Wisconsin AA butter, and potato flour.
