A breezy and sophisticated Mezze Lounge appeals to a variety of guests seeking a hip, upbeat venue with deliciously affordable fare. “Mezze” is defined as a small plate in Greek, Mediterranean, and Middle Eastern cuisine. These dishes range from traditional fattoush, unique salads, flatbread pizza, hummus, and a variety of kabobs specially crafted by Executive Chef Jose Guerrero. The plates are small and designed to be shared and experienced together. To accompany this, Chloe provides a variety of light, refreshing, and fun specialty cocktails such as the Conte de Fee (meaning fairy-tale in French), the Ginger Garden, and the Melon Margarita. It’s the perfect atmosphere for happy hour and early night cocktails.
Chloe’s discothéque was designed to be more European in feel with rich design textures from floor to ceiling. The discotheque boasts a custom-made sound system, never-before-seen 22 foot LED wall, and 20 coveted tables reserved for Denver’s elite. The music is a combination of Top 40, mash ups, and vocal house that will be mixed nightly by the country’s top DJ’s and celebrity hosts. Because of the limited capacity, bottle service reservations are required or guests need to be on the High-Profile guest list.
Chloe is the place where Denver’s celebrities, scenesters, business professionals, and trendsetters alike can come together in one place.
Back in 1976, a few buddies opened a pizza restaurant in Boulder, Colorado. From the start they agreed on a few basic principles: serve up delicious, handmade pizza, have the best lineup of cold beers in town and treat everyone who walks through the door like family.
More than three decades later, we sport a fresh new look, a new menu and lots of new faces, but Old Chicago is still committed to being the best place to share a world-class pie and great craft beer. Whether you show up for a light lunch, a first date or a little league championship celebration, you can always count on gathering around and sharing big smiles, good times, great beer and made-from-scratch food.
It's all about hard work, an honest approach and a commitment to quality in everything we do. Good enough isn't good enough for us, and it sure isn't good enough for you.
Mercado at Dorchester is a rooftop and lounge experience featuring a vibrant menu of ceviches, tapas and global tacos, developed by the gifted Denver Chef Michael Nevarez, the Sous Chef at Bones, and co-owner of the forthcoming Mijo. Bitter Bar's James Lee has consulted on the cocktail program, which will center on Beergaritas - the Mexican influenced cocktail, combining the flavors of beer and margarita into one fun drink, especially suited for this type of food.
The impressive 4000 square feet rooftop, offering table seating, as well as cabanas, is like no other open air space in Denver.
Dorchester is about global cuisine. This is not fusion, but rather authentic food from all over the world, prepared with a local, organic twist. A meal at Dorchester takes you on a culinary journey around the world. At one table, you can feast on savory crab beignets alongside Vietnamese banh mi and Belgian mussels with fries and more, all served sharing-style.

History and Background
One day, thirteen years ago, after 10 years as a Sushi Chef in Tokyo, I wondered, how and in what fashion the traditional Japanese Sushi culture can be presented to the diverse, multi-cultured Americans? With this curiosity, I traveled to New York in 1999 and worked as a Sushi Chef in New York for over 11 years. In 2010, I came to Denver to visit friends, and fell in love with this city immediately. I started to think of relocating to Denver after visiting the Sushi bars around town and studying the life of a Sushi Chef in Denver. Surprisingly, I found that people here appreciate sushi very much, and this finding made me very happy, because this is something my team can provide. My best friend, Chef Mike (Masatoshi Nakanishi) and I gathered our professional team to establish Aoba Sushi, a unique and stylish sushi restaurant, in the heart of Denver. Our restaurant is based on the traditional spirit of cleaving the original taste (mo chi a ji), and the originality of multicultural tastes (a so bi gokoro). Denver, here we are! We will bring you some of the most unique sushi experiences from Tokyo and the US. East Coast. See you at the sushi bar!
