An homage to oysters, pork and beer, The Publican's eclectic menu is inspired by simple farmhouse fare in a space evocative of a European beer hall. Executive Chef Paul Kahan and Chef de Cuisine Cosmo Goss have developed a network of purveyors to supply the restaurant with hand-selected, sustainably-harvested fish and seafood as well as sustainably-raised heirloom pork to anchor a rustic menu of simple, eclectic fare. The extensive international beer list, developed by partners Eduard Seitan and Terry Alexander, features 100 or so ales, lagers, stouts and ciders by the bottle, 12 of those available on tap. The nationally-revered nightlife visionaries of Element Collective created this opulent, accessibly elegant wine and Champagne salon. The lavish 1,500-square-foot space off Green St. is discreetly tucked-away at the foot of a secluded cobblestone alley in the progressive West Loop / Fulton Market neighborhood. RM, simply put, is Grower Champagne. The designation RM is derived from the French wine Appellation d'Origine Contrôlée (AOC) system’s classification of Champagne Houses; Récoltants Manipulants (RM), signifies an artisanal farmer who bottles his own wine. Celebrating this passion and care, the salon will pay homage to these growers that rely solely on fruit from their own vineyards with inherently distinct terroir. Bringing a balance of knowledge and passion that will be an enriching testament to Chicago’s forward-thinking wine community, Wagner will tailor an obsessively curated portfolio, which will feature a large selection of estate-grown wines from these vignerons who are intensively involved from bud-break to bottling. “I want to break away from the intimidating aspects of Champagne,” he explains, “For me, despite all of the ostentatious terminology and ritual, Champagne is essentially fun and fascinating; there is nothing that gets me more stoked than simply sharing that fun and fascination with a guest.” Conceptually, the name RM embodies Element Collective’s core philosophy of a balance between the progressive and the approachable. “We thrive on juxtaposition—this urbane and incredibly romantic setting presents the perfect environment to showcase artisanal winemakers,” explains Chris Dexter, Partner. “We share an appreciation for artisanal products that just exude the care with which they were made... and these vignerons, these grower-producers, they have the dirt under their fingernails to prove it. There’s no pretense within any of our projects, nor is there at RM—which is why we chose the bold simplicity of the acronym over the complicated French phrase from which it is derived.” The meticulously selected and sourced Champagne, sparkling and wine menu will be paired with an ambitiously esoteric cheese program, dainty tea sandwiches and canapés; refined petits fours, pastries and mignardises are made in-house by pastry chef Nate Meads. The dedicated staff at Johnny's is continuously working to promote core hockey values, sportsmanship, integrity, team work and pure enjoyment of the game. Johnny's is home to 120 adult teams in nine divisions from Elite to beginner. In addition, Johnny's hosts and is founder of the Chicago Jets Youth Hockey Club. We are the home hockey rink for the St. Ignatius and Latin School high school teams as well as the practice rink for the Chicago Blackhawks. Johnny's IceHouse offers a wide variety of clinics and programs for male and female hockey players of all ages and skill levels. We also host a variety of youth & adult hockey tournaments throughout the year, including a 30 team youth Thanksgiving tournament, a 20 team youth Christmas tournament, and a 16 team Adult Memorial Day tournament. CAN/AM also hosts a yearly Adult Tournament on St. Patrick’s Day weekend. Our ice is tirelessly maintained, and our facilities are always kept clean.
