The first restaurant was opened by David and Jerry Todd in Ketchum, Idaho, during the winter of 1991/1992. They saw the need for a restaurant that offered a casual dining experience coupled with a quality menu, so this is what they set out to do. The company is currently operating nine locations, seven in Southern Idaho, one in Northern Idaho, and one in Sandy, Utah. The growth of the company is due, in large part, to the outstanding individuals that make up the restaurant teams. Clint and Stefani Severson, the owners of the first Hokulia Shave Ice shack, love to visit the Hawaiian Islands. They especially love Kona-The Big Island. In 2008 they went to Kona together and while sitting on the beach eating some awesome Shave Ice they decided that they needed some “Island Love” back home.
