Executive Chef Macchia’s vision has driven some enhancements to La Stanza at Labriola Chicago,located on the Grand Avenue Overpass at 535 North Michigan Avenue. Formerly known as the ‘Ristorante’ in the food hall, the beautifully appointed and classically designed dining room has been given its own identity. “La Stanza” is Italian for “The Room”. Under Macchia’s guidance, the restaurant’s menu has been expanded and updated, and includes authentic pasta recipes, such as old country favorites like Pappardelle, a house made pasta dish tossed in a made from scratch Ragu Bolognese. The menu also features its signature Berkshire pork shank and other delights including Chicken Saltimbocca and a delectable Ligurian Fisherman’s Stew.

At La Fournette, the Zimmermann’s – with Pierre and his sons in the bakery and Michele directing Front of House operations – wish to recreate their family bakery in Alsace while making it uniquely Chicagoan. La Fournette’s products are respectful of the seasons and local produce. The most of the breads are made with natural sourdough starters, a slower process that results in superior flavor and texture.

CHEF PETER RIOS, OWNER AND EXECUTIVE PASTRY CHEF Chef Peter Rios is the Owner and Executive Pastry Chef of Alliance Patisserie, which sprang from his training and work in French technique to yield modern, thoughtful and delicious pastry throughout Chicago. Chef Peter Rios also operates Alliance Bakery & Café in Wicker Park, an award-winning bakery known for their groundbreaking custom cake designs. Chef Rios previously served as executive pastry chef at the Fairmont Hotel Chicago leading a team of ten in the pastry department. He created Asian and global inspired desserts at Aria, the hotel’s award-winning restaurant. The Aria Sushi Bar, Lobby Lounge and the Club Lounge were other outlets at the Fairmont which offered international desserts. Prior to Fairmont Hotel, Chef Rios served as executive pastry chef at Sofitel Hotel Chicago for almost four years. He enjoyed the challenge of preparing modern French pastries for the flagship location of this French hotel company. As executive pastry chef for the Art Institute of Chicago for six years, Chef Rios created many themed buffets and displayed his talents in matching modern and traditional pastry to art exhibits and shows for this famous museum. There, his creations met the mouths of global visitors and dignitaries. Chef Rios has trained extensively in Europe and has participated in demonstrations in Paris, Lyon and Nice, France and most recently in Chocolate and Pastry seminars in Istanbul, Turkey. Chef Rios is a graduate of Kendall College. He has participated is multiple advanced courses at the French Pastry School Chicago since 1994 were he continues to learn and evolve in the art of Pastry.
Delightful Pastries is a privately owned, european style baking company with three locations in Chicago. All three locations are very different however. The location on Lawrence Avenue is where all of the items are made and shipped from every morning. This location and the one in the French Market only serve the pastries and baked goods. The location on N Wells street is a cafe which serves breakfast and lunch until 3pm. This location has a full kitchen along with fine coffee drinks, and all of the delicious pastries, cookies,and fresh breads. The cafe also has free wireless internet.

Their movement, styles, silhouettes, color palettes, trends throughout the years, and she received her degree from the Fashion Institute of Design and Merchandising (FIDM), after studying in San Francisco and Los Angeles. She interned under fashion stylist, Amy Goldberg, at the chic Beta Boutique in Chicago. She was quickly recognized for her talents by New York Fashion Week Producers in 2008. With a great understanding of fit, proportion, and the silhouettes of the human body, she is able to offer her clients, her expertise knowledge, of how to best dress their bodies. Sararose has made a name for herself amongst her celebrity and high profile personality clientele, with her love for promoting eco-friendly, fashion forward styles and her passion for helping individuals not only recognize their inner beauty, but to also celebrate it by expressing their own personal style story through fashion and the garments they wear. She has worked as a stylist with numerous Chicago news networks, and is go to stylist for celebrity raw foodist, Karyn Calabrese, Karyn Raw, Marisa Buchheit, Miss Chicago 2012 (Miss America Organization), and Nancy To, Miss Illinois 2012 (Miss United States Organization). Sararose also partnered with Deborah Koepper Beauty, and is now the first and only to exclusively carry celebrity coveted, Deborah Koepper Beauty Products at her Chicago boutique. DK Beauty has been seen from the runways of NYFW to Major Motion Screen Pictures, and Sararose is so excited to have it available exclusively for her clientele. Expansions are on the rise at the boutique, soon to offer a full array of beauty and wellness services, Sararose, has plans to make the Stix and Roses boutique, a one stop shop for her clients to pamper, nourish, and nurture their inner and outer selves; whether for special occasions, events, or just to escape for a bit, to rejuvenate and refresh their look.
