About Out of the Blue Peruvian Fusion Cuisine Partners!! Chef Santiago was born in Peru, surrounded by Peruvian flavors. Since Santiago was young, he has loved the art of cooking. After studying Hotel Administration at Le Cordon Blue in Lima, Peru, Santiago moved to New York in 2008 with a dream and a suitcase. It was there that he married the love of his life, who encourage him to continue with his passion of being a Chef. Since then, Santiago has worked at many famous restaurants all over Long island, NY. Santiago has prepared dishes ranging from fine Italian cuisine to old fashioned BBQ and have had the honor of being recognized by a famous Long Island Newspaper food article. In trying to find his niche, Santiago realized that his true passion is to share with the world, the exquisite flavors of Peru! As a private Chef and Entrepreneur, Santiago's passion is to be of service to others so that they can have an incredible food experience. Santiago cooks from the heart and it shows in his dishes. Chef Chris Smith and Entrepreneur Rob Lowry met some 20 years ago working in a restaurant in Asheville, NC where the food and fun experience began. Over the years there have been marriages, children, family and friends, but the common thread has always been great meals. Chef Chris ventured away from Western NC long enough to attend culinary school in Vancouver BC but the pull of the Blue Ridge Mountains brought him back to WNC to perfect his recipes. In the meantime, Rob started up several successful businesses in Raleigh, NC and then found his way back to Asheville woking for a new venture. Now in 2015 Chef Santiago, Chef Chris and Entrepreneur Rob Lowry are teaming up for this amazing and unique food venture. MISSION: Our food is good and affordable, always, with no exceptions. The name White Duck Taco Shop originates from a nickname the Chef earned when she frequently got excited and talked too much to the kitchen staff. They called her "La Pata Blanca" which means White Duck. We are a husband and wife, backed up by a great crew who get better every single day. Our space is pretty awesome. We have an outdoor patio overlooking the French Broad River and the train tracks. We also have our own parking lot right next to the restaurant. No meters, no tickets, no fees, no garages. Just park and come on up. We carry a small inventory of wine and several draft beers. We do not serve hard liquor. We are available for private functions, seating 45 people inside and 45 people outside.
We are a small doughnut shop focusing on making the best doughnuts we know how to make! We use one dough and change up our toppings by the week. Our dough takes 24 hours from start to finish and is all made by hand (other than an initial 2 minutes in the Hobart mixer). We use a non- sour pre ferment, cage free eggs, stone ground organic flour from Lindley Mills, unrefined cane sugar, sea salt, organic whole milk, and whole butter to make our doughnuts. We strive to serve them hot to you! We fry all of our doughnuts in rice bran oil. Our milk and chocolate milk by the glass come from Farm to Home Milk. It is non-homogenized and 100% grass fed milk. Our orange juice is 100 % juice with pulp. Our coffee comes from PennyCup Coffee less than a mile away. Our prices reflect our local ingredient choices and commitment to pay above living wage to our wonderful employees. We hope you enjoy your doughnuts and your time at Hole when you visit! Thank you.
