At our last food and wine pairing I asked our winemakers what they would cook for St. Patrick’s Day and all three gave me the same answer...but the similarities stopped RIGHT THERE. These master chefs all began describing their mouthwatering recipes for Irish Stew, argued over over lamb or beef, with or without carrots, Guinness or red wine, barley or cabbage... about the only thing they agreed upon were the potatoes !!! And when it came to discussing the spices, I’ve never heard more spirited arguments both for and against rosemary. There really wasn’t much else to do but to showcase all three recipes.
